As a major part of our students' education, they will be asked to put their knowledge and hands to work by going into the local communities, planting trees and creating abundance. . .
We will work with the municipality to designate public areas where we can put our knowledge to work. For instance, we will go into a neighborhood and plant 100 to 1,000 fruit trees of 10 to 30 varieties, including avocado, palms, oranges, mango, guava, bananas. . .and veggies.
The concept of sustainable living is exploding worldwide. We are confidant that this will become so popular that we will have to duplicate our model many times over throughout the world.

At OSA MOUNTAIN VILLAGE we are creating a farming system that produces fruits, vegetables, eggs, poultry, fish, goat milk and other products. Our goal is to fulfill the demand of the community and of the OSA MOUNTAIN VILLAGE restaurant. Imagine being part of a community that provides you with wonderful organic products all grown sustainably on-site.
The farming systems designed around the community will use ecological and sustainable methods to produce food. The production of grains, root crops, greens and vegetables will also produce great amounts of biomass that will be processed in composting piles. All of this material will be mixed with food scraps, animal manure, dry leaves, branches and soil to produce large compost piles that will later serve as a great amendment for the soil. By feeding our soil with compost each year we will guarantee soil health for future harvests. The soil is a living ecosystem and needs to be respected when used for farming. Our goal is to recycle as many nutrients as possible and give them back to the soil, to the plants and to the animals by utilizing intensive composting. At OSA MOUNTAIN VILLAGE we will have a wide variety of farming activities that will contribute to the sustainability
and the identity of the community.
OSA MOUNTAIN VILLAGE will have herb, spice and medicinal gardens with a sun-drying room for the herbs and spices we wish to dry, store and mix for medicinal and culinary purposes. Also, many of these plants will serve as main ingredients to create plant extracts that will be used as an important method
of our integrated pest control system.
Our tropical fruit trees will provide the community with a very diverse supply of wonderful tropical fruits that you can eat fresh or processed in juice, jelly and yogurt that will be made in our restaurant or at your home.
Free range chickens will be grazing in our fruit tree orchards, serving as a natural pest control and in the meantime feeding themselves with protein rich insects, grasses and legumes thereby requiring less grain feed. Our goal will be to produce our own feed consisting of corn, soy and sorghum crops for our animals. The egg shells will be dried and crushed as a source of minerals such as Calcium for the soil. Chicken and poultry manure will be incorporated in our compost as a Nitrogen and Phosphorous boost to later incorporate in our fruit tree, grain and legume production.
Goats will graze in the pastures and will also be fed in the barn with protein and nutrient rich forages produced on the farm in our forage bank. Goats will only need small amounts of grain after such a diverse and healthy diet, providing the system tools to sustain itself with local food. Goat milk will be processed into yogurt
with fruit flavors and into cheese for our community.
Our greenhouse will provide our community with a wide diversity of greens and veggies all year. Also, our biointensive garden and our food forest will be producing roots, tubers, grains, legumes, fruits and greens with sustainable organic farming methods such as crop rotation, crop association and soil conservation. Our priority is to have a healthy soil. This way we will have healthy plants and healthy people. A healthy soil needs to be rich in organic matter and have plenty of beneficial microorganisms and organisms such as worms. To accomplish this we will prepare our soil with compost produced from all the different ingredients on the farm and beneficial microorganisms that will be reproduced by natural methods. In other words, we will feed our community while feeding the soil and the plants.
Our pest control methods will utilize a more preventative approach based on a diversified system that supports itself using biological control methods, plant extracts, insect traps and naturally repellent barriers.
Fresh water fish ponds will be producing great amounts of a fresh water fish called tilapia. Native to African lakes, this omnivore will thrive on clean fresh water and can be fed with forages, worms and grains produced on the farm. Several ponds will be designed in circuit to recycle the water with the help of water down flow. In our last pond, species of fresh water clams and lobster will be introduced as an additional food source. The water coming out will later be used for irrigation during the dry season on our fruit trees and grains with high efficiency hydraulic pumps
that do not demand any electricity.
Our pigs will be raised in an open pasture area and will be fed a great amount of tropical fruits, pasture grasses, grains and forages produced on the farm. Pigs will be responsible for our biogas production. Biogas is produced in anaerobic decomposition of organic matter such as pig manure and is very rich in methane. This gas will serve as an energy source for the cooking stoves of our restaurant. Biogas can even be used to produce electricity with a propane generator! The water coming out of our biodigester will be stored in a tank and used as a natural fertilizer for our forages and pastures used to feed goats, pigs, chickens and tilapia.
Some of our residents will use ecological composting toilets (toilet systems that do not use any water), these will be harvested after a 6 month period of aerobic decomposition by efficient microorganisms. This 6 month period will guarantee odorless compost that will be applied to our fruit trees and reforestation projects. This is great compost that will incorporate a lot of nutrients into our soil.
The key for our sustainable food production is to diversify our activities, reusing and producing new resources while we recycle nutrients inside our farm from each different activity. We will also give added value to our products by utilizing
quality food processing and storage methods and facilities.
